Food Books & Cookbooks – The Cuban Edition

I spent the majority of 2015 studying Cuban cuisine: pre-Castro Cuban history, traditions, cuisine, and popular restaurants; changes in post-Castro Cuba; recipes lost in transition; life in exile; current state; and speculation on what’s in store for the future.  My main goal was to provide concrete examples tracking the evolution of Cuban cuisine from pre-Castro Cuba to life in exile in South Florida. There was a lot of information, however, there were holes and history books need to be bulletproof. I had to retire the project, but I did end up with a fantastic reading list.  I purposefully left out books by Nitza Villapol, as I will be writing another post specifically dedicated to her.

Versailles Restaurant Cookbook
The Versailles Restaurant Cookbook Cover / Excerpt from foreword by Andy Garcia: “All exile communities will find places of solace wherever they end up. Places that provide this most necessary emotional and spiritual space. Where one can gather with fellow exiles and share a profound love and nostalgia for the country they have left. For those of us in the Cuban exile community in Miami, Versailles is such a place.”

For an even deeper dive into Cuban culture and cuisine, I highly suggest multiple visits to the Cuban Heritage Collection at the University of Miami and the Cuban Archives at FIU. Is there something I missed? Let me know in the comments section below.
