I spent the majority of 2015 studying Cuban cuisine: pre-Castro Cuban history, traditions, cuisine, and popular restaurants; changes in post-Castro Cuba; recipes lost in transition; life in exile; current state; and speculation on what’s in store for the future. My main goal was to provide concrete examples tracking the evolution of Cuban cuisine from pre-Castro Cuba to life in exile in South Florida. There was a lot of information, however, there were holes and history books need to be bulletproof. I had to retire the project, but I did end up with a fantastic reading list. I purposefully left out books by Nitza Villapol, as I will be writing another post specifically dedicated to her.
